PUMPKIN COOKIES

These, no joke, are going to be in rotation for the next 365 days! A subtle hint of pumpkin + lots of chocolate chips. This simple gluten free cookie recipe will soon be in your rotation too!

PUMPKIN CHOCOLATE CHIP COOKIES

serves .... you be the judge :)

Gather your goods

1 egg

1/2 c. pumpkin puree

1/2 c. coconut sugar (i used monkfruit sweetener)

1/3 c. nut butter of choice

1 t. vanilla

-----

2 1/3 c. almond flour

1 t. pumpkin spice

1 t. cinnamon

1 t. seal salt

1/2 c. DF chocolate chips, divided (i used enjoy life)

Preheat + Mix + Bake + Enjoy

preheat your oven to 350 degrees. mix the top 5 ingredients together, then combine the bottom 5. place the dough in the freezer for 5 minutes. roll into balls and press down with a piece of parchment paper. top with remaining chocolate chips and sprinkle with sea salt. bake for 18 minutes. let cool on a cookie rack. they will be chewy and amazing! store in the fridge.
