"wakin' up too early. maybe we could sleep in. make you banana pancakes. pretend like its the weekend now".....
come sunday morning, all i want to go is watch hgtv in bed, sip my homemade latte and eat ALL THE PANCAKES. when i was younger, my mom would take out the bisquick and whip up cakes in no time. today, people are making only the healthiest breakfast, pancakes being one of them and i am going to show you how i make the most delicious and moist, flavorful and health conscious, PALEO cakes for you.
now that i know that healthy pancakes are REAL, i eat pancakes or waffles every weekend. and the best part? i don't feel any guilt because these cakes are delicious and full of flavor without having to sacrifice taste. y'all need to hop on this trend and ill help you get started.
ingredients: i doubled this
3 eggs
1/4 cup almond milk or coconut milk
3 tablespoons butter or coconut oil, melted
1 tablespoon maple syrup
3 scoops (6 tablespoons) vital proteins collagen
1/3 cup plus 2 tablespoons coconut flour
1/2 teaspoon baking soda
pink salt
1 tablespoon coconut oil, for cooking


instructions:
in a mixing bowl, whisk together the eggs, almond or coconut milk, butter or coconut oil, maple syrup, and collagen.
add the coconut flour, baking soda, and salt; mix well.
melt the coconut oil on a hot greased skillet over medium heat.
cook the pancakes in 1/3 cupfuls until golden brown on each side and cooked through.
smother in pure maple syrup and top with your favorite berries
